Anzac biscuits

Anzac biscuits are an Aussie classic. Today I would like to share my favorite recipe with you.

Anzac biscuits
Yield: about 45
Prep time: 20min.
Total time: 40min.

2 cups rolled oats
2 cups desiccated coconut
2 cups plain flour
2 cups caster sugar
250g butter
2 tsp. b. soda
4 Tbsp. boiling water
2 Tbsp. golden syrup

Directions:
1. Preheat oven to 170C. Line trays with baking paper.
2. In large mixing bowl combine the oats, coconut, flour and sugar.
3. In a small saucepan or microwave melt the butter and golden syrup together. Set a side.
4. Mix boiling water and b.soda together. Add this mixture to the melted butter. The mixture will foam up.
5. Add this butter mixture to the dry ingredients and stir with wooden spoon thoroughly.
6. Note: If the mixture is too crumbly, biscuits wont hold together, add a small amount of water. But if you add too much water they will spread out totally during baking.
7. With your hands roll into balls and flatten only slightly. They will spread out during baking so make sure you have enough space between them.
8. Bake for about 15min. until golden brown.. Baking longer will give a crunchier biscuits, less time = softer biscuits.

Anzac cookies

Priprava: 20min.
Celkovy cas: 40min.
1 hrnek = 250ml

2 hrnky vlocek, celych (ne jemne) 
2 hrnky kokosu
2 hrnky hl. mouky
2 hrnky cukr pisek
250 g masla
2 pol. lzice zlateho (golden) syrupu (nemate-li dejte med)
2 c. lzicky sody
4 pol. lzice varici vody

1. Troubu predehrej na 170. Plechy vyloz pecicim papirem.
2. Ve velke mise smichej vlocky, kokos, mouku a cukr.
3. V malem hrnci, nebo v mikrovlnce rozpust maslo se syrupem.
4. Varici vodu smichej se sodou a pridej do rozpusteneho masla. Samo to napeni.
5. Tuto maslovou smes pridej do misy s vlockama a promichej varechou az se spoji.
6. Tip: Pokud se hmota hodne drobi pridej trochu vody aby se dala vytvarovat  kulicka. Pokud  pridas vody hodne, cookies se pri peceni rozlejou na placku!
7. Vytvaruj mensi kulicky, dej na plech zlehka pritlac zhora.  Potrebujou kolem sebe misto, nebot se pri peceni roztahnou.
8. Pecu asi 15 min. dozlatova. Pokud mate radi krupave nechte v troube o neco dele.

The story behind the Anzac biscuits / Pribeh australskych susenek Anzac

It's Anzac Day this Thursday (25th April) is a nationwide day of commemoration for Australians and New Zealander's of the lives lost at war, especially the ANZAC (Australian and New Zealand Army Corp) of World War 1.

Here is the story of how the Anzac biscuits came about. Legend says that the wives, mothers and girlfriends of the Australian soldiers were concerned for the nutritional value of the food being supplied to their man. Here was a problem. Any food they sent to the fighting men had to be carried in the ships of the Merchant Navy. Most had no refrigerated facilities, so any food sent had to be able to remain edible after periods of few months.
The group of women came up with the recipe for biscuits with all the nutritional value possible.
The ingredients they used were: rolled oats, sugar, plain flour, coconut, butter, golden syrup, b. soda and boiling water. 
At first the biscuits were called Soldier's Biscuits, but later on they were renamed ANZAC Biscuits.
Nowdays, Anzac biscuits are manufactured commercially and sold in supermarkets all year around, but they can't beat the homemade ones!

So I made a batch for tomorrow's tea time. Can't wait to enjoy them.

Ve ctvrtek 25.4. je u nas Anzac den. Pietni vzpominka na australske a zelandske vojaky, kteri ztratili sve zivoty v 1.svetove valce.
Chci se s Vami podelit o pribeh, jak vznikly tyto Anzac susenky.
Legenda rika, ze manzelky, matky a divky australskych vojaku, mely obavy jestli jejich drahe polovicky netrpi  hladem a tak chtely svym milovanym poslat nejakou tu dobrutku na prilepsenou. Problem byl ten, ze cesta lodi trvala nekolik mesicu a ne na vsech lodich byly chladici zarizeni, takze jidlo ktere poslaly muselo vydrzet dlouho cestu.
Zeny vymyslely susenky, ktere obsahovaly suroviny, ktere se jen tak nezkazi a dodaji vojakum potrebnou energii. Ingredience ktere pouzily byly vlocky, cukr, mouka, kokos, maslo, zlaty syrup, soda a voda.
Zpocatku susenky pojmenovaly Vojakove Susenky, ale pozdeji byly prejmenovane na Anzac susenky.
V dnesni dobe jsou susenky vyrabeny komercne a dostanou se koupit v kazdem supermarketu po cely rok, ale neni nic lepsiho jak ty podomacku upecene!
Upekla jsem jich par i pro nas a navstevu. Uz se tesim na zitra az si je vychutname k caji nebo kave.

Make-up pouch / Tastickovani

Potrebovala jsem darek pro kamaradku a tak jsem uz par dni premyslela co bych mohla vytvorit. Kamaradka rada cestuje,  cte a tak me napadlo co treba toaletni tasticku a nejakou tu zalozku do knizky! A tak vznikla prvni tasticka. Pri siti jsem pouzila  Anna's tutorial   at Noodlehead. 

I needed a gift for a friend of mine so I was thinking for few days what can I make. I know that my friend likes to travel and read and my idea of making her make-up pouch and few bookmarks was born!
I have used Anna's tutorial at Noodle-head.



Zalozky byly hotove raz dva. Maji tvrdsi vystuhu uvnitr aby drzely tvar, sesite kolem dokola a obstrihle zubatyma nuzkama. Nakonec jen maslicka prisita knoflikem.

Bookmarks were done fast. I put some thick interfacing inside so they hold shape, sew around with straight stitch and cut around with pinking scissors and as a last touch I add small ribbon and button.

No a to tastickovani se mi tak zalibilo, ze jsem nemohla zustat jen u jedne a tak jsem sila a sila a sila....:) Je to vazne navykove! :)

I had so much fun! I couldn't stop so I made more, more and more.....:)






Po tastickach se jen zaprasilo a tak mi nezbyva nic jineho nez se dat znovu do siti! :) a usit jeste nejakou pro sebe :)

The fresh loaf / Cerstvy chleba

Is there anything better than smell of freshly baked bread? I love sourdough bread especially one with walnuts and raisins. When my local bakery stop making it I decided I will make my own. So I start my research about artisan bread and I learned a lot. It actually takes days to make a good sourdough  bread.  
I learned how to make fresh sourdough starter and few days later I was ready to bake my first sourdough rye bread with raisins and walnuts. It is a big process, not much physical labor involved but time consuming. It takes "only" 6hours to proof the dough, little bit of kneading, slapping and folding and lots of patience and boy was it worth it??? Hell yes! 


Je na svete neco lepsiho nez vune cerstve upeceneho chleba? Krupava kurka a mekka strida....
Kdyz v me mistni pekarne prestali pect nas oblibeny chleba s vlasskymi orechy a hrozinkami, rozhodla jsem se ze si budu pect svuj vlastni. A tak jsem zacala reasearch o Artisan peceni a kvaskovem chlebe. Musim rict, je to veda a takovy dobry bochnik potrebuje nekolik dni pripravy. Naucila jsem se jak si vyrobit vlastni kvasek a jak mi vyzral byla jsem pripravena pect. Je to proces, ktery nevyzaduje moc prace jen cas a trpelivost. Rikate si stalo to za to??? Po pravde odpovim Ano!

Baby Boy Quilt

Finally the baby boy is here! Made this quilt in January for friend of mine. The reason I didn't post it sooner was that the baby's name was "top secret" :) So no more secrets now :) as you can see from label on quilt! What a lovely name. Hope he will sleep well!

Konecne chlapecek je na svete! Tento quilt jsem usila uz v lednu, pro kamaradku ale duvod proc jsem ho jeste neukazala byl ten, ze jmeno maleho drobka bylo tajne az do posledni chvile :) Tak ted uz to zadne tajemstvi neni jak muzete videt z nasivky na dece. Vybrali moc hezke jmeno a tak doufam, ze se malemu bude dobre hajat!

Co mame dnes k snidani? / What's for breakfast today?

Kuskus se susenym ovocem na snidani jsem si oblibila. Zasyti i kdyz porce je mala, doda energii a je to zdrava mnamka! Rada zkousim nove recepty a tenhle je od Michelle Bridges, nase australska fitness guru. Vyzkousejte :)

Couscous with dry fruit is a warm filling breakfast and really sets you up for the day. It gives you energy you need and it's delicious! Portion is small but it's pretty filling. I love to try new recipes and this one is from Michell Bridges our Australian fitness guru. Give it a try :)
 


Na 2 porce potrebujete:
1/2 hrnku cerstve pomerancove stavy
1/3 hrnku (80ml) kuskus
6 susenych fiku, nakrajenych
6 susenych svestek, nakrajenych
1/2 hrnku jogurtu, bily nizkotucny
spetka skorice

V malem hrnci privedte pomerancovou stavu skoro k bodu varu, pridejte kuskus, zamichejte a prikryjte poklickou. Nechejte stat 5 min. Pote pridejte susene ovoce, promichejte vidlickou. Rozdelte do dvou misek, pridejte jogurt a spetku skorice a mate vybornou snidani.


Makes 2 portions:
1/2 cup freshly squeezed orange juice
1/3 cup couscous
6 dry prunes, diced
6 dry figs, diced
1/2 cup low-fat plain yoghurt
pinch of ground cinnamon

Heat the orange juice in a small saucepan until hot. Add couscous and cover. Let it sit for 5 min. Add dry fruit, stir with fork. Divide into 2 bowls add dollop of yoghurt and sprinkle of cinnamon.

Tip:
Lze uchovat do dalsiho dne v lednice a pak staci jen prihrat v mikrovlnce a pote pridat cerstve jogurt.

You can store any leftovers in the fridge. Just warm it up in the microwave and add yoghurt just before serving.
